Ingredients


  • 30 grams blended oats

  • 1 scoop vanilla protein (whey/casein blend) PEScience Gourmet Vanilla used

  • 2 tbsp. ground flaxseeds

  • 1/4 tsp baking powder

  • 1 egg white

  • 60 ml cold coffee

  • 1 tsp vanilla extract

  • cocoa/cacao powder

  • optional: syrup of choice (maple syrup, Walden Farms low-sugar syrup, espresso-infused syrup)


    Filling:

  • 1/2 large banana

  • 120 grams thick, plain Greek yogurt (Fage 5% used)

  • 1 tsp vanilla extract

    Optional Coffee-infused maple syrup:

  • Mix 1 tbsp maple syrup with 1 tsp coffee


Directions


  1. Blend oats into a flour in your blender or food processor.

  2. Pour oats into a mixing bowl with the ground flaxseeds and scoop of protein powder and stir together. Mix in the egg white, cold coffee and vanilla extract.

  3. For the filling, blend in a blender the banana, cottage cheese and vanilla until a thick sauce consistency.

  4. Preheat a cooking pan and spray with olive oil spray. Pour pancake batter into pan in circles of your chosen size and cook, flipping once, until done.

  5. Plate the pancakes, with the filling between the pancakes and a dollop on top. Sprinkle with cocoa powder if desired for effect. Add just a touch of syrup of your choice if desired. Voila! Your breakfast is ready to be devoured!
